Step 1
Assemble sandwiches with basil, tomato, peach and mozzarella on good quality bread. I recommend sourdough. Drizzle olive oil and balsamic over the sandwich and then sprinkle salt and pepper. Close sandwich.
Step 2
Heat a splash of oil in a skillet oven medium heat. Cook sandwich until golden on one side and then flip and repeat.
