Instructions

Ricotta spread

Step 1
Chop the basil and sundried tomatoes. Grate the parmesan cheese.
Step 2
Add all the ingredients to a bowl and mix well.

Chicken

Step 3
Slice the mozzarellla.
Step 4
Heat the oil in the pan. Leave the heat on medium. Add the chicken and seasoning. Fry for 3min.
Step 5
Flip the chicken. Season again. Place the mozzarella slices on top and pu t on a lid. Fry for 3 more minutes. If the chicken breast is too thick you can bake it in the oven for another 5-10min at 180 degree.

Sandwich

Step 6
Cut the Ciabatta in half. Spread both sides with olive oil. Toast until golden brown.
Step 7
Meanwhile slice the chicken breast.
Step 8
Spread the bottom half with the ricotta spread.
Step 9
Top it with the arugula and chicken.
Step 10
Drizzle on the balsamic cream.
Step 11
Stack the other bread half on top and enjoy!
