Ingredients
6 servings

1 Tbspolive oil

6bell peppers
not green, diced

0.5zucchini
diced

4garlic clove
minced

1sweet onion
large, diced

2 tspcumin

1 tspsweet paprika

½ tspsalt

½ tsppepper

⅓ cupfrozen corn

400gcan black beans
drained and rinsed

580 gramsground pork
or turkey

1 cupstock

Canned plum tomatoes
whole then diced
For the corn topping
Instructions
Step 1
Sauté bell peppers, sweet peppers, zucchini, onions, and garlic. Cook on medium heat with olive oil









Step 2
Add seasoning, stir

Add corn, stir


Step 4
Add mince pork. Break up until cooked

Step 5
Add taco seasoning mixed in 1 cup of water

Add crushed tomatoes

Preheat oven 350 F or 176.6 C

Make masa topping
Step 8
Combine dry ingredients, stir

Add butter, stir


Step 10
Add chicken stock ( 1/2 cup at a time)


Make pie

Butter the dish (cast iron not needed, 9x13 casserole dish)

Spread filling

Spread shredded cheese on top of meat filling

Put dollops of masa on top, then smooth with back of spoon ( oil on back might help)

Cook for 30-40 min, until golden brown on top
