Ingredients
8 servings
1yellow onion
roughly chopped
1green bell pepper
roughly chopped
2poblano peppers
optional, roughly chopped
6garlic cloves
roughly chopped
3chiles in adobo
1 ½ cupsmole
1 lbground beef
1 lbground pork
1can black beans
drained & rinsed
1can corn
or frozen, drain & rinsed
1 ½ tspcumin
1 ½ tspchili powder
1 ½ tsporegano
1 ½ tspadobo spice
salt
to taste
pepper
to taste

Instructions
Step 1
In a large pot or dutch oven, sauté the meat until browned then set aside.
Step 2
In the same pot, sauté the onion and pepper in olive oil until softened.
Step 3
Add garlic and chiles, continue to sauté until fragrant, about a minute.
Step 4
Add beans and corn; stir to combine.
Step 5
Add meat, mole sauce, and spices; stir to combine.
Step 6
Add water or stock as needed to adjust consistency.
Step 7
Serve in a bowl blue corn chips and garnish with sour cream, green onion, jalapeño, lime and cotija cheese
