When the 5 minutes are up, shake the sauce pan one more time.
Step 12
Peel the eggs, starting at one of the cracks you created.
Step 13
Dice the eggs into 1/4" dice and set aside.
Boil the potatoes
Step 14
While the eggs are cooking, start the potatoes.
Step 15
Dice the potatoes into about 1" dice. It's helpful to dice the potatoes into similar size pieces, so they cook consistently.
Step 16
Place the potatoes in a large saucepan.
Step 17
Add enough water to cover the potatoes.
Step 18
Add 1 tsp salt and 1/2" tsp pepper to the potatoes.
Step 19
Bring the potatoes to a boil over high heat.
Step 20
Reduce the heat to medium heat.
Step 21
Boil until the potatoes are just barely fork tender, about 10-12 minutes.
Step 22
Pierce a potato with a fork to check them.
Step 23
As soon as the potatoes are done, remove them from heat and drain them into a colander.
Radishes
Step 24
Dice the radishes into 1/4" dice.
Dressing
Step 25
While the potatoes are cooking, make the dressing.
Step 26
In the bottom of a large bowl, mix together the mayonnaise, mustard, dill relish, 1 tsp salt, 1/2 tsp pepper, celery seed, dill, and apple cider vinegar.
Step 27
When the potatoes are done, add them to the bowl of dressing while they are still warm.
Step 28
Add the radishes and eggs.
Step 29
Fold the potatoes over, tossing them into the dressing.
Step 30
Stir until the potatoes are coated in the dressing.
Step 31
If the salad seems dry, like it doesn't have enough dressing to coat, add more mayonnaise, 1 tbsp at a time, until the potatoes are coated in dressing.
Step 32
Cover the potatoes and chill at least two hours for the flavors to blend. This salad is delicious made a day ahead.
