Instructions
Step 1
Peel the skin off potatoes, cut into 1/4 inch cubes, boil in salted water until cooked and still firm.
Step 2
You may also add the eggs 3-4 minutes in the same pot before potatoes are cooked.
Step 3
Chop and dice the raw onion and set aside.
Step 4
Mix together mayonnaise, mustard, salt, and black pepper and set aside.
Step 5
Drain the hot water in the pot and set aside the potatoes to cool room temperature and then place them in a large mixing bowl.
Step 6
Once boiled eggs are cooled take of shell off and dice.
Step 7
Now combine all ingredients and fold carefully and well with a spoon or plastic spatula.
Step 8
Add more salt or black pepper or even Garlic salt to taste as you prefer.
Step 9
The salad tastes best after it has been refrigerated for at least 1 to 3 hours.
