Instructions

Step 1
Start by chopping the chocolate bars into small chunks.
Step 2
Add both sugars, salt, and the melted butter to a bowl. Mix with a spatula into an even consistency, like wet sand.
Step 3
Add the egg and vanilla extract. Mix well.
Step 4
Add the flour and baking soda. Mix well, but not too much as to overwork the flour and develop more gluten than needed.
Step 5
Add the chopped chocolate (use a bench scraper to get it off cutting board easier) and mix to combine.
Step 6
Prepare the dough into balls using an ice cream scoop into 90g each balls. Should yield around 10.
Step 7
If baking immediately, place in a preheated oven at 350f for 9-10 minutes, or until golden. Remove from oven. Wait 5 minutes, then transfer to a wire rack and sprinkle flakey salt on top.
Step 8
If baking later (preferred) let dough balls rest in fridge for 4-24 hours. Longer time means more developed flavor. Follow baking instructions in step 7 to bake.
