Instructions

Step 1
First, to marinate the chicken, grab 1.5lbs of chicken (use your favorite cut) then cube it up and put it into a bowl. Drizzle 1 to 2 tbsp olive oil, then add a couple pinches salt, pepper, 1/2 to 1 tbsp garlic powder, 1 tbsp oregano, 2 tbsp sumac (I like a lot of sumac), and 1/2 tsp of cumin. Add 1.5 tbsp plain greek yogurt and the juice of 1 lemon, then give it a good mix, cover, and ideally marinade for 2-6 hours.
Step 2
When you’re ready to make the chicken, you can either cook these on the stove top, air fry them, or even bake them in the oven. I got a cast iron pan on medium heat, added 1-2tbsp of avocado oil, added the chicken, then removed once they were cooked through.
Step 3
You can have the chicken with whatever you want, but I made a simple salad with 2 small heirloom tomato, 3 Persian cucumbers, 1/2 avocado, a handful of black cured olives. I dressed it with 1.5 tbsp olive oil, a couple squeezes of lemon juice (not too much), salt, pepper, a bit of dried oregano. Give it a good mix then adjust.
Step 4
And of course, I also added a couple slices of halloumi cheese. Just cut it with a knife, spray a pan with avocado oil, bring it to medium heat, flip the cheese when golden brown.
Step 5
You can serve the chicken up with some of the salad, some halloumi cheese, top it with some fresh herbs, some more sumac, and anything else you want. I also topped it with a simple lemony yogurt sauce that I made by mixing 2 tablespoons of greek yogurt with some lemon juice, salt, pepper, and fresh parsley.
