Ingredients
2 servings
2 servingsbuckwheat noodles
3 cupsnoodle broth
Store-bought, Korean, cold
½ cupradish kimchi
sliced, recipe posted
0.25apple
crispy, thinly sliced
2eggs
½ cupKorean spinach salad
Optional, recipe posted
Spicy Sauce
Instructions
Step 1
Make “cold noodle slurpee” by freezing store-bought cold noodle broth for a few hours then smash with a metal spoon.
Step 2
Make hard-boiled eggs according to your preference. Peel, let cool, cut in half and set aside.
Step 3
Cook noodles according to package. Rinse well with cold water, drain and set aside.
Step 4
For the spicy sauce, combine garlic, Korean hot pepper paste, soy sauce, rice syrup, rice vinegar, sesame oil, sesame seeds and water. Mix well.
Step 5
Place noodles in a bowl. Add spicy sauce and mix.
Step 6
Top with radish kimchi, spinach salad, apple, egg and cold noodle slurpee. Enjoy!
