Instructions
Step 1
preheat oven to 350°F / 180°C

Step 2
whisk together sugar, vanilla, salt, and egg until lightened in color




Step 3
add oil, mix until thick and ribbony

Step 4
add milk, and whisk

Step 5
add cornstarch, and whisk

Step 6
sift in 90 g flour, and baking powder, mix until mostly homogeneous


Step 7
in a separate bowl, toss berries in 1 Tbsp of flour until totally coated


Step 8
add berry mix to the batter, and fold to incorporate
Step 9
prep a 9"×5" (22cm×11cm) loaf pan with oil, or your method of choice, and pour batter into the pan. top with granola if desired.

Step 10
bake 45 minutes, or until test poke comes out clean
