Step 1
This is a dish made to be cooked in a microwave. In a microwave defrost spinach and drain well, set aside. Melt butter in a 2 quart casserole bowl, then blend in flour, salt, mustard, paprika, nutmeg, and pepper. Next stir in milk then cook uncovered 4 to 6 minutes or until thickened, stirring after the first 2 minutes, then each 1 minute after that until thick. Next stir in cheese until melted. Then stir in spinach. Now you are ready to combine the egg yolks with the hot thick spinach mixture. Beat egg yolks slightly. Slowly add hot spinach mixture to avoid heat cooking the egg yolks, stirring constantly. Be careful to add the hot spinach Set aside. In a large glass or metal bowl beat egg whites with cream of tartar until soft peaks form. Gently fold into sauce mixture. Four into a glass ungreased round baking dish. Microcook uncovered on 30% medium to low for 15 to 40 minutes or until just set in the center.
Step 2
If using fresh spinach use three to four cups, just add the fresh chopped spinach, it can be precookef to soften, but not required, make sure drained or dry.
