This was a family favorite. You can make it in a 10 cup Bundt or a 9x13 pan. The lemon glaze is optional, but it is quite delicious.

Ingredients

4 cupsapples
chopped
2 cupssugar
2 cupsflour
2 tspbaking soda
2 tspcinnamon
1 tspsalt
2eggs
½ cupvegetable oil
2 tspvanilla
1 cupchopped nuts

Instructions
Step 1
Preheat oven to 350. Grease and flour a 10 cup Bundt or 9x13 pan. *This cake is very dense and is not suitable for a fluted or decorative Bundt.
Step 2
Chop apples and toss in a medium bowl with the sugar. Set aside to stand 5 min, this is about how long it will take to pull together the rest of the recipe.
*The sugar and juice from the apples will make a slurry-like texture. Don't worry, that is what is supposed to happen.
Step 3
Soft together dry ingredients in a medium bowl. Set aside.
Step 4
In a mixing bowl, beat eggs until light. Add oil slowly while beating. Stir in vanilla.
Step 5
Add dry ingredients into the eggs. Alternate with apple mixture. The dough will feel funny, but don't worry. Stir in chopped nuts, then pour into prepared pan.
Step 6
Bake at 350 for 1 hour.
Step 7
Let cool completely on wire rack before adding glaze or serving.
