Ingredients

4 Tbspolive oil
1onion
large, diced
1green Romano pepper
or bell, sliced
4garlic cloves
chopped
1 tspsweet smoked paprika
500gtomatoes
chopped, peeled, tinned is fine
1 tspdemerara sugar
½ tspdried oregano
1bay leaf
4 x 150gtuna loin steaks
salt
ground black pepper
Instructions
Step 1
Heat the olive oil in a large saucepan over a medium heat and add the onion, pepper and garlic
Step 2
Fry for 15 minutes, until the onion is soft and transparent
Step 3
Add the sweet smoked paprika (sweet pimentón) and stir for 15 seconds before adding the tomatoes, sugar, oregano, bay leaf and a little black pepper. Cook over a medium heat for at least 20 minutes, until the sauce has reduced a bit and has a rich consistency
Step 4
Cut each tuna steak into 6 pieces, season with a bit of salt and add the pieces to the tomato sauce. Simmer for 3 minutes and serve while the tuna is still pink in the middle
