One Pot Caramelized Onion Pasta

Ingredients

1 Tbspbutter
1 Tbspolive oil
2onions
large, thinly sliced
½ tspsalt
2garlic cloves
minced
½ tspdried thyme
¼ tspcrushed red pepper flakes
½ tspblack pepper
½ tspbalsamic glaze
2 cupsbeef broth
8 ozpasta short shaped
¼ cupheavy cream
2 ozBoursin cheese
optional
½ tspworcestershire sauce
½ cupgrated parmesan cheese
¼ cupgruyere cheese
or mozzarella cheese
Instructions
Step 1
Heat the butter and olive oil in a large skillet over medium-low heat until the butter is melted.
Step 2
Add the thinly sliced onions to the skillet, spreading them out evenly.
Step 3
Sprinkle the salt over the onions.
Step 4
Cook the onions, stirring occasionally, for about 45-60 minutes or until they are deeply golden brown and caramelized. The slower you cook them, the sweeter and more caramelized they will become.
Step 5
If the onions start to stick to the skillet or brown too quickly, you can reduce the heat and add a splash of water to deglaze the pan.
Step 6
Once the onions are caramelized, add in the dried thyme, crushed red pepper flakes (optional) and black pepper. Cook for 2 minutes.
Step 7
Add the uncooked pasta to the pot (short shaped pasta works the best). Pour in the beef broth, making sure the pasta is mostly submerged.
Step 8
Increase the heat to medium-high and bring the mixture to a boil. Then, reduce the heat to medium-low and simmer, stirring occasionally, for about 10-12 minutes or until the pasta is cooked al dente and most of the liquid has been absorbed. If most of the liquid has been absorbed but the pasta is not yet to al dente, add a little more beef broth and cook until it’s al dente.
Step 9
Add in the heavy cream, Boursin cheese (optional) and Worcestershire sauce. Gently incorporate into the sauce.
Step 10
Turn off the heat and stir in the grated Parmesan cheese and shredded gruyere cheese or mozzarella cheese until melted and well combined. Season with freshly ground black pepper to taste.
