VIRAL 'COWBOY CAVIAR' INSPIRED MEAL-PREP SALAD

Since the cowboy caviar went viral last year, I have not been able to stop thinking about it. Cowboy Caviar is a TexMex dip, which is inspired by Mexican food, and brings all the amazing flavors. My recipes are rarely traditional, though, so I’ve made a few twists on it to make it a complete and balanced meal, with added protein from the edamame and whole grains in the form of quinoa to make it extra satiating.
And wow, this one is definitely a winner! I like to add my avocado at the last minute, but if that’s not an option, make sure to drizzle lots of lime juice over it to keep it from browning. A handful of crunchy tortilla chips is also a super fun add-on!

1 ½ cupsblack beans
cooked
2 cupsshelled edamame
thawed
2 cupsquinoa
cooked
1red capsicum
diced
1yellow capsicum
diced
2corn on the cob
1 tspolive oil
1 tspsmoked paprika
1jalapenos
deseeded diced
250gtomatoes
diced
0.5red onion
1 cupcoriander
chopped
1avocado
diced
Dressing
Instructions
Step 1
Preheat a pan on medium to high heat. Brush the corn with olive oil and smoked hot paprika. Cook on the pan, turning every 2 minutes, for up to 10 minutes, until kernels start to brown but are still juicy.
Step 2
Combine the dressing ingredients.
Step 3
Assemble in the following order: dressing, black beans, edamame, quinoa, capsicum, diced tomatoes, red onions, grilled corn, jalapenos, and fresh coriander. When ready to eat, add avocado and tortilla chips if using 🙂
