Tofu Walnut Salad

Instructions

Step 1
1. Start by removing the excess moisture from the cubed tofu by squeezing and patting with a kitchen towel. Add to a large bowl and coat with the nutritional yeast, corn starch, and salt. Toss to combine.

2. Add the vegetable oil to a non-stick frying pan on high heat. Wait until the oil is hot and then add the tofu to the pan. Evenly distribute the tofu across the pan so none of them are touching. Leave to fry for around 4 minutes, or until golden brown and crispy on one side.

3. Remove from the pan and set aside.

4. Finely chop/dice the lettuce and walnuts. Add to a large mixing bowl, following with the raisins.
Step 5
5. Pour the dressing into the large salad and toss to evenly coat all of the ingredients.
Step 6
6. Serve the salad in a bowl, and top with cheese (optional) and tofu.
