Instructions

Step 1
1. Cut pork into 1 x 1/4 in. strips. Place pork and bell pepper in a 3-1/2 quart slow cooker.
Step 2
2. In a small bowl, combine peanut butter, honey, ginger, and jalapeno chile. Stir in teriyaki sauce. Spoon over pork.
Step 3
Cover and cook on LOW 4 or 5 hours or until pork is tender. Stir thoroughly before serving.
Step 4
3. Meanwhile, cook rice according to package directions. Spoon pork mixture over rice. Sprinkle with toasted coconut
Step 5
NOTE: To toast coconut, bake 5 min in a 9-in. cake pan at 350F (175C).
