No noodle veggie lasagña

Instructions

Step 1
Heat the oven to 200 Celsius
Step 2
Slice the zucchini, eggplant, and red pepper length-wise
Step 3
Brush olive oil on both sides and season with salt, black pepper and oregano
Step 4
Bake the vegetables and garlic clove, flipping after they are lightly browned
Step 5
Cube the tofu
Step 6
Put the tofu, 1/4-1/2 lemon juice, roasted garlic clove and salt in an immersion blender and blend until smooth
Step 7
In a loaf pan, spoon tomato sauce on the bottom
Step 8
layer the vegetables adding the tofu, mozzarella and tomato sauce
Step 9
Top with a layer of mozzarella
Step 10
Bake in the oven until bubbly
