Instructions
Step 1
Pre heat Oven on 200°c/Gas 6.
PASTRY
Step 2
Rub fat into flour until it is like breadcrumbs.
Step 3
Add enough cold water (2 tbsp approx) to give a stiff dough.
Step 4
Roll out to size of cake tin, plus depth. Line tin.
Step 5
Trim off extra pastry. Make sure the pastry edge looks smart!
Step 6
Prepare/cook (if necessary) fillings, as above. Place in pastry case or add after the cheese.
Step 7
Beat eggs with a fork in a small bowl or jug, to break down the chalaza and combine white and yolk. Beat in milk, lightly. Pour this egg & milk mixture over pastry case. Sprinkle over the grated cheese.
Step 8
Add any ingredients you wish to add on top of cheese to add colour.

Bake 25-30 minutes until golden brown, and the runny egg mixture has gone solid.
