½ cupunsalted butter
room temp
½ cupsugar
1 tspvanilla
2eggs
room temp
1 Tbspmilk
¾ cupcake flour
½ Tbspbaking powder
½ tspsalt
Cream
Ganache
Instructions
Step 1
Preheat your oven to 350f and make sure all ingredients are room temperature.
Step 2
Cream your butter, sugar, and vanilla until light and fluffy. Add the eggs one by one until well incorporated, followed by the tablespoon of milk.
Step 3
Sift in your flour, baking powder, and salt. Fold until just combined, do not over mix. Divide batter equally between two 6inch baking pans.
Step 4
Bake for 25-30min, or until the top has browned nicely and a skewer inserted comes out clean. Allow the cakes to cool down completely before leveling.
Step 5
To make the cream, simply combine the cold heavy cream and instant vanilla pudding, and then whip on high until it’s fluffy.
Step 6
To make the ganache, finely chop your chocolate (or use high quality chips) and put the heavy cream in a pot to simmer over medium-low heat. Pour the hot heavy cream over the chocolate, add butter (or corn syrup) and let it sit for a couple of minutes before mixing well. You should have a silky smooth chocolate ganache. Let it slightly cool before assembling.
Step 7
To assemble, spread the cream on one cake layer. Place the other cake layer on top and gently press down. Finish with pouring the chocolate ganache on top, spreading to the edges. Allow the chocolate to set in the fridge, and enjoy!
