Step 1
Preheat oven to 375 F. Prepare pie crust (thaw out if frozen) and set in fridge. Do not pre-bake crust. Add egg yolks into large bowl. Set aside.
Step 2
In skillet, heat together cream, brown sugar, cornstarch and salt. Stir and allow to come to boil (stirring continuously with whisk). Once thickened, remove from heat.
Step 3
Temper egg yolks by adding a little of hot cream mixture at a time with whisk. Do this until all of cream mixture blended with egg yolks and smooth. Then add honey and vanilla and stir. Pour filling into pie crust and bake 40-45 min (I recommend placing baking sheet under pie to bake if using store bought pie crust in aluminum pan). Once finished, pie will still be jiggly. Sprinkle with sea salt. Allow to cook and fully come to room temp. Refrigerate and allow to become cold and firm before serving. Serve with whipped cream!
