Instructions
Step 1
Chop the chorizo into 0.5cm cubes, thinly slice the spring onion, and finely chop three cloves of garlic.
Step 2
Put everything in the pan under medium heat for about 6 minutes, until the chorizo starts to sweat
Step 3
Add the tomato paste, and cook until it's slightly darkened
Step 4
Add two undrained cans of butterbeans with some salt, stir, and bring everything to a boil on high heat.
Step 5
Lay two cod fillets on top of the stew, cover and turn the heat down to medium low. Simmer for 10 minutes.
Step 6
Check the cod is cooked, it should flake when you put a fork through it. If it does, serve directly from pan. Chop and add parsley if you want.
