Slow-Cooker Adobo Chicken

Ingredients
12 servings

6 lbsskinless boneless chicken thighs

2yellow onions
large

10garlic cloves

30 ozcans diced fire roasted tomatoes
7 ozcans chipotle chiles in adobo sauce
lesser for less spice

2limes

feta cheese

sour cream

tortillas
small

cilantro
Instructions
Step 1
Dice and sauté onions in 3 Tablespoons of oil until softened.
Step 2
Transfer onions to food processor, along with fire roasted tomatoes (with juice), garlic, adobo chiles and lime juice. Purée until smooth.
Step 3
Add chicken thighs to slow-cooker. Pour sauce on top. Cook on law 4-5 hours.
Step 4
When finished, shred chicken. Serve on a tortilla or rice with feta cheese, sour cream, lime, cilantro, and any other topping of choice!
