Instructions

Step 1
In a large bowl, combine the flour and salt.
Step 2
Add the cold butter pieces and the mashed banana to the flour mixture. Use your fingers to rub the butter and banana into the flour until the mixture resembles coarse crumbs.
Step 3
Gradually add the ice water, a tablespoon at a time, mixing until the dough just begins to come together.
Step 4
Form the dough into a disc, wrap it in plastic wrap, and chill it for at least one hour.
Step 5
After the dough has chilled, roll it out to fit your 13cm cheesecake pan. Gently press the dough into the bottom of the pan.
Step 6
Pre-bake the crust in your air fryer at 160°C for 5-7 minutes, until it's just starting to become golden. This will help your crust to stay firm even after the filling is added. (Previous version: Preheat your oven to 190°C. Bake the crust for about 20-25 minutes, or until it's lightly golden.)
Step 7
In a large mixing bowl, combine the Greek yogurt, whey protein isolate, casein protein powder, and optional cornstarch or flour. Mix until well combined.
Step 8
Beat in the egg until well combined.
Step 9
Add the honey and optional vanilla extract, and mix until smooth.
Step 10
Pour this mixture over your pre-baked crust in the springform pan.
Step 11
In a saucepan, combine the banana slices, blueberries, and honey. Cook over medium heat until the fruits are soft and a syrup has formed. Let it cool.
Step 12
Preheat your air fryer at 160°C for about 5 minutes.
Step 13
Carefully place the springform pan in the air fryer basket.
Step 14
Set the temperature to 160°C and the timer to 10 minutes initially.
Step 15
After the timer goes off, check the cheesecake. It should still be a bit jiggly in the center, but set around the edges. If it's not set, continue to cook in 2-3 minute increments until it's done.
Step 16
Once done, open the air fryer drawer slightly and let the cheesecake cool in the air fryer for about an hour. This slow cooling process will help prevent cracks.
Step 17
After the cheesecake has cooled for an hour in the air fryer, spread the cooled banana-blueberry topping over the top.
Step 18
Remove the cheesecake from the air fryer and refrigerate it for at least 4 hours, or overnight before serving.
