Cold Strawberry Soup with Fresh Pasta

This recipe is inspired by the cold fruit soups section of the cookbook "Carpatian Cuisine" by Sergii Pozhar. Traditional Ukrainian fruit-based summer soups are made with wild and farm strawberries, blackberries, blueberries, apples, pears, and raspberries. They are sweetened with sugar and honey and mixed with pieces of fresh fruit. Some of them are thickened with starch or egg yolks, some not. In many cases, the tartness of fruit is balanced with whole milk, sour cream, or heavy cream. My recipe is a very simple version that doesn't require cooking. Fruit-based cold soups can be enjoyed as is or with toasted bread, especially brioche. They can also be adorned with cooked fresh pasta known as "lasanki" (which means "lasagna pieces").

Step 1
Bring 3 quarts of water to boiling over high heat in a large pot.

In a bowl, measure the flour and place the butter on top. Pour hot water over the butter to melt it. Using chopsticks, distribute the liquid evenly in the flour. The mixture will look like large crumbs. Using your hands, knead them into a smooth dough. Cover with plastic wrap and let rest for 15 minutes.

To make Lasanki dumplings, divide the dough into two even portions. Work with one at a time and keep another covered with plastic wrap. Roll the dough 1/16" thin. Make rounds 1-1.5" in diameter using a cookie cutter.

Shape each round by pinching the center and cook for about a minute in boiling water. Strain the dumplings into a bowl with melted butter, and shake them slightly to coat them.

Combine cold strawberries, cold cream, and sugar in jar of blender and process until smooth.

Transfer the soup to small serving bowls. Arrange cooked dumplings and sliced fresh strawberries, and enjoy!
