Krupnik - Traditional Polish Barley Soup

Can’t wait for the winter to end? In the meantime, try to keep warm with a warming bowl of soup. This traditional Polish soup made with barley, called KRUPNIK (pronounced: croopneek) is nutritious and also delicious.
Barley, is a popular in Polish Cuisine and awesome whole grain, that has many nutrients. It is rich in fiber, which helps regulate your metabolism and lowers cholesterol.

Step 1
Melt the butter in a large soup pot. Saute the onion for a few minutes until translucent. Add the grated garlic, carrot, parsley root, celery and leeks. Cook for a few minutes. Season with salt and pepper. Add the bay leaf, spices, barley and potatoes. Pour the chicken stock on top and cook for 20-25 minutes until the vegetables are soft and the barley cooked.
Step 2
Once cooked, sprinkle some chopped parsley and dill over the top. Serve hot and enjoy!
