Concocted as a light, creamy summer dessert for Russian Emperor Nicholas I and later savored by Prince Rainer III and Princess Grace of Monaco at a White House luncheon in 1961, Strawberries Romanoff is the perfect balance between refreshing strawberries and luscious cream with rich orange liqueur.

4 Cupswhole Strawberries—
hulled, washed, and quartered

4 Tbspgranulated sugar

6 TbspOrange-flavored Liqueur
Cointreau for a lighter flavor or non-alcoholic Orange Juice

3 tsphoney

1 cupheavy whipping cream
cold

3 Tbsppowdered sugar

½ tspvanilla extract

4 TbspCrème Fraîche
or Sour Cream

Instructions
Step 1
Hull, wash, and quarter 4 Cups of strawberries, then add to a medium bowl combining 4 Tbsp granulated sugar, 4 Tbsp orange-flavored liqueur, and 2 Tsp honey; stir to combine until sugar dissolves. Cover and set aside for at least 10 minutes or allow berries to refrigerate for 1-2 hour for richer liqueur flavor.
Step 2
In a large mixing bowl, whip together 1 Cup cold heavy whipping cream, while gradually adding 3 Tbsp powdered sugar, 1/2 Tsp vanilla extract, 1 Tsp Honey, and 2 Tbsp orange-flavored liqueur. Beat until soft peaks form. Stir in the crème fraîche with a spatula until well blended.
Step 3
Equally divide the berries among parfait glasses, cocktail glasses, or champagne coupes and top with the cream. Alternatively, fold the berries into the cream for a more balanced taste. Add a dusting of powdered sugar on top with a baker’s dusting wand and use a microplane zester to zest orange on top. Optionally, garnish with shortbread cookies, silvered almonds, or fresh mint. Serve and enjoy!👑
