Instructions

Step 1
Wash 4 large tomatoes ( roughly 360 grams ) then quarter lay on a wire rack on a baking tray season generously with salt pepper and drizzle olive oil all over . Roast 35 minutes 200 c / 400 f fan setting . Once roasted let them cool down .

Add tomatoes garlic lemon juice vinegar egg yolks salt and pepper to taste to a food processor and blend until smooth

Slowly drizzle in 1 cup of oil . I mixed a light olive oil with avocado oil but you can use your preferred oil . Soon the sauce will become lighter in color and thicken . Stop blending then add chopped fresh herbs . Store in a sterilized container in the fridge for up to a week and enjoy
