Instructions

Step 1
1. Preheat the oven to 200 degrees Celsius (390 degrees Fahrenheit) with both top and bottom heat. Line a baking sheet with parchment paper.

2. In a bowl, mix together the flour, sugar, and baking powder.

3. Add the butter, vanilla extract, eggs, and maple syrup. Mix well until a sticky dough forms. Then add the almonds and knead until everything is well combined.

4. Cover the bowl with the dough and let it rest in the refrigerator for about 30 minutes.

5. Shape the dough into 6 equal-sized rolls, each about 25cm (10 inches) long.

6. Place the dough rolls on the prepared baking sheet and bake in the preheated oven for 15 minutes, until they turn lightly golden.
Step 7
7. Remove the Cantuccini from the oven and let them cool briefly. Then cut each dough roll diagonally into approximately 1cm (0.4 inch) thick slices.
Step 8
8. Place the cut Cantuccini back on the baking sheet and bake for another 10 minutes until they become lightly golden. Make sure they don’t get too dark.
