Thai Chopped Salad

Ingredients
3 servings
2 cupscurly kale
½ cupquinoa
cooked according to package instructions
1 cupcabbage & carrot mix
1 cupedamame
½ cupcucumber
diced
cilantro
green onion
chopped
roasted peanuts
optional
jalapeño
diced, optional
Sesame Ginger Lime Dressing
Instructions
Step 1
In a large bowl, mix together all salad ingredients.
Step 2
To prepare the dressing, whisk together all dressing ingredients in a medium sized bowl. Pour the dressing over the salad and toss to coat.
Step 3
Once the salad is thoroughly coated in the dressing, sprinkle with optional toppers such as cilantro, roasted peanuts, green onions and jalapeño!
