Instructions
Step 1
Season the salmon fillets evenly with salt and pepper
Step 2
In a plastic bag, place the salmon, lemon rind, 1 tbsp lemon juice, 1 tbsp olive oil and rosemary.
Step 3
Ensure the salmon is evenly coated then place the bag in the fridge for 30 minutes to marinate
Step 4
Place the fillets, skin side down, on the oil coated dish.
Step 5
Broil fish 6 inches from the heat for about 8 - 10 minutes or until the fillets flake easily with a fork
Step 6
Whisk together the remaining tablespoon of oil and lemon juice - drizzle over the fillets and serve garnished with the lemon slices
