Instructions

Step 1
In a small bowl, add 2 tablespoons of olive oil, lemon juice, paprika, oregano, basil, thyme, garlic, shallot, salt and pepper.
Step 2
Add marinade to the chicken and marinate for at least two hours.
Step 3
Drain marinade from the chicken and thread chicken onto skewers to prepare them for the grill.
Step 4
Brush with remaining 2 tablespoons olive oil; season with salt and pepper, to taste.
Step 5
Preheat grill to medium heat.
Step 6
Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through. Serve with a Greek salad,
Step 7
tzatziki sauce and pita bread.
