Ingredients

4 cupschicken
cooked, shredded
12 ozcoleslaw mix
4 ozmatchstick carrots
1 cupfresh cilantro
¼ cuppeanuts
¼ cupgreen onions
2serrano peppers
1lime juice
salt
to taste
¼ cupunsweetened coconut milk
¼ cupchunky peanut butter
1 tablespoonminced garlic
1 teaspoonginger powder
2 tablespoonscoconut aminos
2 Tablespoonssesame oil
½ teaspooncrushed red pepper flakes

as needed
Instructions
Step 1
1. In a large bowl, combine all chicken salad ingredients. Set aside.
2. In a medium bowl, combine all peanut sauce ingredients and whisk or blend until smooth and evenly combined.
3. Drizzle a small amount of peanut sauce over chicken salad and toss to combine until evenly coated.
4. Serve chilled and enjoy!
5. For best results, store leftover chicken salad and peanut sauce separately.
