Making the Dough
Step 1
lightly mix your water and yeast for a couple seconds, once yeast has risen back to the water surface, add your flour and salt. Stir hard and continuously until dough smooth but resistant.






Step 2
place a clean cloth over your bowl and allow dough to proof for 90 minutes
Step 3
punch your dough to release air bubbles and shape into a ball, allow dough to rest for another 30 minutes
Step 4
sprinkle flour on your clean countertop and tear dough into individual servings, massage dough into smooth spheres and use flour as needed to stop the dough becoming sticky

Step 5
roll your dough out until it is thin and even but not thin enough that it’s translucent - you should be able to easily pick up your rolled dough without breaking it - use flour as needed to remove tackiness

place rolled dough onto baking paper BEFORE adding fillings

Filling the Pide

finely chop your onion and spinach, thinly slice your feta and mozzarella, grate your tasty cheese and halve your cherry tomatoes








Step 8

layer your ingredients onto the rolled dough - onion, tomato, grated cheese, feta, oregano, spinach then mozzarella








Step 9

fold your pide and pinch to seal dough edges, sprinkle paprika on top

heat oven to 220°C fan-forced and cook for 10-15 minutes (until dough is puffed and golden)

Step 11

cut pide into slices and enjoy
