Instructions

Step 1
Cut zucchinis into thin batons measuring 8 cm x 1 cm (~3 in x 0.5 in)
Step 2
Make your tempura batter by combining AP flour, rice flour, cornstarch, baking powder, salt, pepper, and sparkling water. Whisk together until thick and smooth (like a pancake batter). You may need to adjust the amount of water and flour.
Step 3
Heat oil to 160 C (325 F) and coat zucchini batons in the batter. Fry in batches for about 4-5 minutes until lightly golden and crispy. Drain on a wire rack or paper towel-lined tray and immediately season with salt.
Step 4
Garnish with grated parmesan and serve.
