Ingredients

2Zucchini
sliced
0.5Red Onion
½ cupcottage cheese
⅓ cupParmesan
1egg
⅓ cupflour
⅓ cupcorn flour
½ Tbspsalt
½ Tbsppepper
2 tspHerbs
1 Tbspgarlic powder
2 TbspOlive Oil
Water
Topping
⅓ cupparmesan
⅓ cupcorn flower
Instructions
Step 1
Preheat the oven to 350°F

Step 2
Slice zucchini and onion to thin slices.

In a mixing bowl, combine the zucchini and onion, set aside.
Step 4
In a separate bowl whisk the egg, cottage cheese, parmesan cheese, herbs of choice, salt, pepper, flour, corn flour & water. Mix everything thoroughly until a well-combined mixture is formed. Should be consistency of pancake mix.
Step 5
Combine mixture with sliced zucchini and onion. Thinly distribute on a sheet pan with olive oil on base or parchment paper.
Step 6
Sprinkle the top with combined 1/3 cup corn flour , and grated 1/3 cup of parmesan cheese. (Will give zucchinella a golden, crispy crust)
Step 7
Place the baking sheet in the preheated oven and bake for approximately 25 minutes or until the top turns golden brown and the zucchinella is cooked. (Sometimes will require a quick broil at the end).
Step 8
Remove the zucchinella from the oven and allow it to cool til warm. Cut it into desired portions.
