Chocolate Orange Cake

Instructions

Step 1
Preheat your oven to 350f and make sure all ingredients are room temperature, except for the heavy cream.
Step 2
Cream your butter, sugar, and vanilla until light and fluffy. Add the eggs one by one until well incorporated, followed by the mayo and buttermilk. Drizzle in the hot coffee while constantly whisking to temper the eggs.
Step 3
Sift in your flour, cocoa powder, baking powder, baking soda, and salt. Fold until just combined, do not over mix. Divide batter equally between two 8inch baking pans.
Step 4
Bake for 30-35min, or until a skewer inserted comes out clean. Allow the cakes to cool down completely before frosting.
Step 5
For the frosting, cream together the mascarpone, powdered sugar, vanilla, and the orange juice, plus the zest. Add cold heavy cream and whip until it’s firm. Transfer to a piping bag.
Step 6
Pipe the frosting on the cooled chocolate cake, and garnish with slices of orange and rosemary. This recipe will make two cakes. Enjoy!
