Step 1
In a mixing bowl, cream together the softened butter and granulated sugar

Add the egg and vanilla extract and mix until well combined

Add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the shredded coconut, making sure it's evenly distributed throughout the dough

Preheat your oven to 175°C

Line baking sheet with parchment paper

Scoop out the dough and place on the prepared baking sheets

Bake the cookies for about 12 minutes or until the edges turn golden brown

Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely
