Prepare the foil

Cut 4 large sheets of heavy-duty aluminum foil, each about 1 ½ feet long. Top each piece of foil with a slightly shorter piece of parchment paper. If you’ll be cooking over a campfire, make sure you’ve got some good hot embers established to cook over.

If you haven’t done this in advance (see note), chop the potato, red onion, red bell pepper, plant-based sausage and green onion as directed. Divide these between the 4 pieces of foil, making a low mound right in the middle. Pour about a teaspoon of cooking oil onto each and season with salt and pepper. Use clean hands or two spoons to give the mixture just a few stirs.

Note You can pre-chop the at home up to 1 day in advance. Transfer to a plastic bag, coat liberally with the cooking oil and seasonings, and squeeze all the air out of the bag. Keep the mixture refrigerated or in a cooler until you’re ready to make the recipe.

Fold the packet in half by bringing the two shorter sides to meet and seal that edge. Fold up the other two sides to make a neat package. Place the foil packets on a grate over a campfire or on a grill and cook for 10 to 15 minutes, until the potatoes are tender. Option to flip halfway through for more even browning.

Add the JUST Egg

One by one, remove the packets from the heat, open and check with a fork to see if the potatoes are cooked through. If so, pour ¼ to ½ cup of JUST Egg over the mixture. Reseal the foil pack and cook for another 5 to 7 minutes until the JUST Egg is set.
Step 10
Oven directions Preheat your oven to 400°F. Cook the potato mixture for 15 to 20 minutes, then an additional 8 to 10 minutes after adding the JUST Egg.
Step 11
Remove the foil packs from the heat and let them sit for 2 to 3 minutes to cool. Open them up carefully and use a fork to fluff the egg up into a scramble. Season with hot sauce or your preferred condiments.
