Succulent, smoky, and full of flavour, these spare ribs are slow-cooked on a Weber grill. They're coated with a homemade dry rub, basted with a tangy BBQ sauce mix, and finished with a hint of apple cider vinegar for a unique twist.

Step 1
Mix brown sugar, smoked paprika, cayenne pepper, dry mustard, onion powder, garlic powder, salt, and black pepper in a bowl. This forms the dry rub. Step 2
Spread the dry rub evenly over the ribs, using your hands to massage it in. Let the ribs sit and marinate at room temperature for about 30 minutes. (Ingredients: pork spare ribs, dry rub; Devices/Utensils: Hands)
Step 3
Prepare your Weber grill for indirect grilling. Place an equal amount of charcoal in each charcoal basket on opposite sides of the grill. If you're using wood chips, soak them in water for at least an hour, then drain and place them on the hot coals once they are ashed over. Step 4
Place the ribs bone-side down in the centre of the grill, away from the direct heat of the coals. Cover the grill and maintain a temperature of around 150°C, allowing the ribs to cook for about 1 hour. (Ingredients: Ribs; Devices/Utensils: Weber grill, grill lid, thermometer)
Step 5
Mix the BBQ sauce with apple cider vinegar. After 1 hour, brush the ribs with this mix every 15-20 minutes, covering the grill in-between. Continue cooking for another hour or until the internal temperature of the ribs reaches 74°C, checking with your handheld thermometer.
