Harissa chicken burger

Instructions

Step 1
Place the chicken breasts between 2 pieces of cling film and, using the rolling pin, gently pound until flattened.
Step 2
Mix the minced garlic, thyme, oil, harissa and half the lime juice in a bowl.
Step 3
Add the chicken to the bowl and gently rub the marinade into the chicken. Leave to marinate for 20 minutes in the fridge.
Step 4
Heat up the barbecue or griddle pan.
Step 5
Cook the chicken for 5 minutes on each side or until cooked through. Remove from the heat.
Step 6
Toast the burger buns for 1-2 minutes.
Step 7
Place a chicken breast on the bottom of each bun and top with tomato, red onion, some cheese, a handful of lettuce and some cucumber.
Step 8
Squeeze over the rest of the lime juice, add the top buns and serve.
