Banoffee Pie (Dairy-Free and Vegan)

Banoffee Pie (Banana and Toffee - not coffee!) with a crunchy buttery cookie base, fresh banana and fluffy whipped cream! I like my toffee filling to be chewy - almost like the filling in a Twix for extra satisfying mouthfuls. This homemade dessert that is sure to get everyone talking and it's the perfect dessert to make for a dinner party!

Instructions

Step 1
Crush biscuits in a food processor into a fine crumb. Transfer into a bowl. Melt dairy-free butter in the microwave and pour over crumbs. Combine well with a spatula and empty into a 19cm springform pan. Take your time to carefully press the crumbs into a pie crust with raised edges - it doesn’t have to be perfect. Place into the fridge while you make the filling.
Step 2
Place brown sugar, dairy-free butter, condensed milk and salt into a saucepan. In a small bowl mix together FLORA Thickened Plant Cream and cornstarch well until there are as little lumps as you can manage. Place the saucepan on low heat and once butter is half melted, add the cream and cornstarch mixture and stir continuously until everything mixed in. Once it’s a uniform mixture, turn the heat up to medium and stir continuously until the mixture bubbles - add a thermometer and cook (still stirring continuously!) until the mixture reaches 100ºC or is bubbling very vigorously. Turn the heat off and pour into the pie case. Refrigerate for at least hours.
Step 3
When you’re ready to serve, take the pie out of the fridge to bring it closer to room temp while you whip your cream. Add FLORA Thickened Plant Cream into the bowl of a stand mixer or a large mixing bowl along with icing sugar and vanilla. Use a stand mixer or electric whisk to whip cream until thick. Slice your banana into coins and top your pie with 1-2 layers of banana (depending on how much you like!) and top with a generous amount of whipped cream. You can spoon or pipe it on. Grate some chocolate over the top or dust on some cocoa powder and serve immediately.
