Instructions

Step 1
Score the duck breast and season with salt and pepper
Step 2
Fry until golden
Step 3
Put in oven at 220 degrees for 6 minutes
Step 4
In pan with duck fat, melt better and soften spring onions
Step 5
Add peas and cook until thawed. Season with salt pepper and sugar
Step 6
Mix in mint and creme fraiche
