Step 1
mix with oiled spoon in big bowl until sloppily combined. Dough will be very gelatinous and not at all firm. Drizzle some olive oil on the top and cover the bowl with wrap. Sit for 3-10 hours. Overnight in fridge if you want :) Pour dough into a baking pan corresponding to the size and thickness of bread you want (the smaller and higher edge the pan, the thicker the bread will be, etc). Sit for 1-2 hours. Dimple with your fingers, sprinkle with sea salt (or, if you want to make a focaccia pizza, sauce and toppings), and bake at 450 until crisp.
