Za’taar Focaccia

Focaccia is one of the easiest bread to make, and my Middle Eastern take on this classic Italian bread is so delicious! Za’taar is a spice mixture of thyme, sumac, toasted sesame seeds, and oregano. It’s a staple spice in Middle Eastern households! You can also add feta cheese on top.

Step 1
Combine warm water, honey, instant yeast, flour, and all the spices until the dough comes together. You do not have to knead this. Transfer the dough to another bowl with the olive oil and let it rest in the fridge overnight or for at least 18hrs.
Step 2
After the dough has risen in the fridge, transfer it to your baking pan. The dough will be cold and will not stretch a lot. Allow it to rest for at least 2 hours, stretching the dough every 30 minutes until it reaches the edges of the pan.
Step 3
Preheat your oven to 450f. When your dough is ready, sprinkle some more olive oil and press down with your fingers to create wells or dimples. At this point you can get creative with your toppings, and even make art. I sprinkled more za’taar and created flowers using cherry tomatoes, black olives, thyme, rosemary, and sage.

Bake at 450f for about 20-25min, or until the top has browned nicely. Enjoy!
