Beans w/ Pork in Instant Pot by Holly Haning

Instead of pork butt roast, you can use 4 strips bacon (diced into pieces).
Instead of a whole sweet onion, you can use 3/4 cup chopped sweet onion and 3/4 cup chopped poblano pepper.

Instructions
Step 1
Put beans in Instant Pot with about one inch of water above the beans.
Step 2
Pressure cook for about 2 to 5 minutes. This will take approximately 25 minutes or so in total.
Step 3
Turn off pot and release pressure. Open and rinse the beans in running water.
Step 4
Heat EVOO in Instant Pot along with pork pieces. When pork is seared on all sides, add the onion, carrots, celery and garlic. Cook until the onion begins to caramelize.
Step 5
Put beans back in pot. Add salt, pepper, sugar and chicken bone broth. Add water until liquid is about 1/2 inches above the beans.
Step 6
Pressure cook until you can just smell the beans. Maybe about 30 to 40 minutes, depending on size of beans.
Step 7
When pressure cooking stops, release steam. Leave beans in Instant Pot until time to serve.
