Ingredients

3bananas
ripe, medium

3eggs
large

¼ cupmilk
or DF milk alternative, I used coconut milk

1 tspvanilla

3 Tavocado oil
or other neutral oil

2 ½ cupsalmond flour
fine

2 scoopsvanilla whey
isolate protein powder
2 Tbspgranulated monkfruit sugar
or coconut, optional

½ cupgolden flaxseed
finely milled

1 ½ tspcinnamon powder

1 ½ tspbaking powder

½ tspsalt
unrefined

½ cupdark chocolate chips
Instructions
Step 1
In a blender, combine the first 5 ingredients until pureed and airy
Step 2
Add the remaining ingredients to the blender and blitz until the batter is smooth.
Step 3
Using a spatula, fold in ½ cup dark or sugar free dark chocolate chips. You can also gently pulse these with the blender to mix in. Scoop the mixture evenly into your lined muffin tin. Top with extra choc chips if desired. Bake at 350 F (convection) for 18-20 minutes. DON’T OVERBAKE!
