Eastern European cottage cheese pancakes :)

Instructions
Step 1
Place a cheesecloth (or very thin washcloth) open in a bowl. Pour cottage cheese in center; tighten cheese in cheese cloth and squeeze out liquid into bowl or sink. Dispose of liquid. Place dried out cheese curds in clean bowl.
Step 2
Add eggs into cheese curds and blend. Add flour, salt and sugar and mix well together form into small pancakes and sprinkle with flour.
Step 3
Heat skillet with oil or butter and fry pancakes until crispy. Enjoy with sour cream or jam! :) *Makes 6 small pancakes-serves 2-3 people*
