Instructions
Step 1
Whisk together almond flour, eggs, and a pinch of salt in a small bowl.
Step 2
Heat half the coconut oil over medium-high heat. When the pan is hot, reduce heat to medium and pour in the batter(one blini per person). Cook for about 4 minutes, until the edges start to crisp, then flip and cook 2 more minutes on the other side. Transfer to a plate. If cooking for multiple people, repeat with the remaining batter.
Step 3
While you wait, cube avocado.
Step 4
In the same skillet, add the remaining coconut oil and spinach. Sautee about 1 minute, until wilted. Remove from heat.
Step 5
Spread blini with yogurt, then top with spinach and avocado. Season with salt and pepper to taste and serve.
