Step 1
Brown the butter
Step 2
Add the cream to the browned butter. Allow the mixture to cool to room temperature. If using an ice bath, make sure to stir so that the mixture doesn't separate, otherwise just leave it out at room temperature to cool.

Add the brown and granulated sugar to the mixture. Whisk together. Add the eggs and whisk. Add the vanilla and whisk.
Step 4
Separately, mix together the flour, salt, and baking soda.

Chop the chocolate.
Step 6
Add the dry ingredients to the wet ingredients and whisk together. Fold in the chopped chocolate.
Step 7
Scoop the dough into balls on the baking sheet. Add extra chocolate on top if you want. Chill the dough for at least 12 hours but up to a few days.
Step 8
Preheat the oven to 350 F. Bake the cookies for 18 to 20 minutes or until the edges are golden brown.
Step 9
Let cool for about 5 minutes before eating.
